Exploring Mixtures and Their Separation

How do we get white sugar from green sugarcane, clean water from muddy water, or petrol from crude oil? By clever ways of pulling mixtures apart — the science of separation. हरे गन्ने से सफ़ेद चीनी, गंदे पानी से साफ़ पानी, या crude oil से petrol कैसे मिलता है? Most things around us are mixtures — two or more substances jumbled together. This chapter shows how to tell the kinds of mixtures apart (solutions, suspensions, colloids) and the many neat techniques used to separate them — mostly through pictures, apparatus diagrams and flowcharts. हमारे आस-पास ज़्यादातर चीज़ें mixtures हैं — दो या ज़्यादा पदार्थ आपस में मिले हुए। यह chapter दिखाता है कि mixtures के प्रकार (solutions, suspensions, colloids) कैसे पहचानें और इन्हें अलग करने के तरीक़े क्या हैं — ज़्यादातर चित्रों, apparatus diagrams और flowcharts के ज़रिए।

1. What Kind of Mixture Is It? [NCERT p.72–73]

A homogeneous mixture looks the same everywhere — the first sip of sugar-water is as sweet as the last. A heterogeneous mixture is uneven — you can see the sand sitting in the water. That is the whole idea; the flowchart above just adds the torch test to split the heterogeneous ones further.[NCERT p.72–73] Homogeneous mixture हर जगह एक जैसा दिखता है — चीनी-पानी का पहला घूँट आख़िरी जितना ही मीठा। Heterogeneous mixture असमान होता है — पानी में बैठी रेत दिख जाती है। यही पूरी बात है; ऊपर का flowchart बस torch test जोड़कर heterogeneous वालों को और बाँट देता है।[NCERT p.72–73]

2. Solutions and Concentration [NCERT p.73–77]

Why does the exact amount matter? ORS (the life-saving salt-sugar drink) only works with the right proportion. Farmers must add the right amount of pesticide — too little fails, too much harms crops and soil. The amount of solute in a given amount of solvent/solution is the concentration.[NCERT p.74] सही मात्रा क्यों ज़रूरी? ORS (जान बचाने वाला नमक-चीनी घोल) सिर्फ़ सही अनुपात में काम करता है। किसान सही मात्रा में pesticide डालें — कम हो तो असर नहीं, ज़्यादा हो तो फ़सल और मिट्टी को नुकसान। किसी solvent/solution में घुले solute की मात्रा ही concentration है।[NCERT p.74]

Meet a scientist — Dr Dilip Mahalanabisएक scientist से मिलो — Dr Dilip Mahalanabis This Indian paediatrician developed and proved the simple ORS treatment for dehydration from diarrhoea and cholera. After the WHO popularised it, ORS has saved millions of lives — a tiny bit of the right salt-sugar concentration in water.[NCERT p.74] इस भारतीय बाल-रोग विशेषज्ञ ने diarrhoea और cholera से हुई dehydration के लिए सरल ORS इलाज बनाया और साबित किया। WHO के प्रचार के बाद ORS ने लाखों जानें बचाई हैं — पानी में सही नमक-चीनी concentration की थोड़ी-सी मात्रा।[NCERT p.74]

Solubility — how much can dissolve?Solubility — कितना घुल सकता है?

Add more and more solute and it keeps dissolving — until it can't. A saturated solution holds the maximum solute at that temperature; extra solute just sits at the bottom. Hotter water usually dissolves more. Evaporation & CrystallizationEvaporation और Crystallization

Evaporation boils/dries off the solvent to leave the solid — but the solid can get spoilt by heat and traps impurities. Crystallization is gentler and purer: make a hot saturated solution, filter it, then let it cool slowly — pure, shiny crystals grow while impurities stay in the liquid.[NCERT p.77–79] Evaporation solvent को उड़ा/सुखा देता है और ठोस बचता है — पर ठोस गरमी से ख़राब हो सकता है और अशुद्धियाँ फँस जाती हैं। Crystallization ज़्यादा नरम और शुद्ध है: गरम saturated solution बनाओ, छानो, फिर धीरे-धीरे ठंडा होने दो — शुद्ध, चमकीले crystals बनते हैं जबकि अशुद्धियाँ तरल में रह जाती हैं।[NCERT p.77–79]

Distillation — separating two miscible liquidsDistillation — दो miscible liquids अलग करना

Two liquids that mix (like acetone, b.p. 56 °C, and water, b.p. 100 °C) can't be filtered apart. But heat the mix: the lower-boiling liquid vaporises first, travels into a cool condenser, turns back to liquid, and drips out pure. India's contribution — Mitti ka Ittar & petroleumIndia का योगदान — Mitti ka Ittar और petroleum In Kannauj (UP), the "perfume capital of India", the earthy after-rain fragrance is captured as Mitti ka Ittar using the traditional Deg-Bhapka distillation. On a giant scale, a refinery uses fractional distillation to split crude oil into petroleum gas, petrol, kerosene, diesel and more — separating liquids whose boiling points differ by less than 25 °C.[NCERT p.81] Kannauj (UP), "India की perfume राजधानी", में बारिश के बाद की मिट्टी की खुशबू को पारंपरिक Deg-Bhapka distillation से Mitti ka Ittar के रूप में पकड़ते हैं। बड़े पैमाने पर refinery fractional distillation से crude oil को petroleum gas, petrol, kerosene, diesel आदि में बाँटती है — ऐसे liquids जिनके boiling points में 25 °C से कम फ़र्क हो।[NCERT p.81]

A drop of black ink is really a mix of dyes. Put a spot near the bottom of a paper strip and dip the end in water (spot above the water). As the water climbs the paper, each dye is carried a different distance — so the black spot fans out into separate colours. 4. Separating Heterogeneous Mixtures [NCERT p.83–86]

Goal: Separate uneven mixtures — immiscible liquids, a subliming solid, and tiny particles in water.Goal: असमान mixtures अलग करना — न मिलने वाले liquids, sublime होने वाला ठोस, और पानी में महीन कण।

Sublimation vs evaporation: sublimation is a solid → gas jump (skipping liquid), e.g. camphor, naphthalene, dry ice. Evaporation is a liquid → gas change. The reverse of sublimation (gas → solid) is called deposition.[NCERT p.84] Sublimation बनाम evaporation: sublimation में ठोस → गैस की छलाँग (liquid छोड़कर), जैसे camphor, naphthalene, dry ice। Evaporation में तरल → गैस। Sublimation का उल्टा (गैस → ठोस) deposition कहलाता है।[NCERT p.84]

Tiny particles in water — Centrifugation & Coagulationपानी में महीन कण — Centrifugation और Coagulation

Filtration can't catch very tiny particles (like blood cells or fine mud). Two tricks: Centrifugation spins the tube very fast so heavy particles are flung to the bottom (used to split blood into plasma and cells). Coagulation adds a coagulant like alum (fitkari) that makes tiny particles clump into big ones that settle and can be filtered.[NCERT p.85–86] Filtration बहुत महीन कण (जैसे रक्त cells या बारीक कीचड़) नहीं पकड़ पाता। दो तरकीबें: Centrifugation tube को बहुत तेज़ घुमाता है ताकि भारी कण नीचे चले जाएँ (रक्त को plasma और cells में बाँटने में इस्तेमाल)। Coagulation में alum (फिटकरी) जैसा coagulant डालते हैं जो महीन कणों को बड़े गुच्छों में जमा देता है जो बैठ जाते हैं और छाने जा सकते हैं।[NCERT p.85–86]

Bridging science and society — the PaperfugeScience और समाज का पुल — Paperfuge A paperfuge is a hand-spun, paper-and-string device (based on a button toy) that spins blood at very high speed — no electricity. It separates blood components to help detect malaria and anaemia in remote areas. The Tyndall Effect — scattering of lightTyndall Effect — प्रकाश का scattering

In a solution the particles are too tiny to block light, so the beam passes straight through, invisible. In a colloid or suspension, the bigger particles scatter the light sideways — so you see the beam's path. This is the Tyndall effect (named after John Tyndall). You see it in sunrays through trees, in a cinema projector beam, and in stadium floodlights on a dusty evening.[NCERT p.87–88] Solution में कण इतने छोटे होते हैं कि light को रोक नहीं पाते, इसलिए beam सीधा निकल जाता है, अदृश्य। Colloid या suspension में बड़े कण light को scatter कर देते हैं — इसलिए beam का रास्ता दिखता है। यही Tyndall effect है (John Tyndall के नाम पर)। यह पेड़ों से आती धूप में, cinema projector की किरण में, और धूल भरी शाम को stadium की floodlights में दिखता है।[NCERT p.87–88]
